Although i'm sure, that composers knew about the emotional effect their music could have on the listeners and did make use of this effect, the idea of actually expressing one's own feelings through composing didn't come up until the romantic era. So Bach maybe did intend to make you hear grief in his music, but it most likely wasn't his own grief.

Actually, 5:39 (the Bach comment) is probably correct (at least partly, depending on the context of the original comment they were replying to). They aren't saying that the music didn't express any emotion. They are simply saying that this emotion didn't necessarily have anything to do with what was going on in the life of the composer at the moment. This is why they said "at the time composers didn't put their _own_ emotion into the music". While baroque music was highly emotional (one of the purposes of the music was to evoke certain emotions in the listener), this doesn't mean that the emotions in the piece had anything to do with the composer's current mood. It is definitely a romantic idea to ascribe this kind of meaning ("because the piece is sad, it must mean that the composer was sad when he wrote the piece") to a piece of music. Just because the composer was struggling during the time of the composition doesn't necessarily mean that the piece was expressing this emotional struggle of the composer. Of course things don't exist in a vacuum, and there may be some kind of a connection between these things. But still, back then the idea that in order to compose sad sounding music, the composer himself needs to feel sad, simply didn't exist. The composer was expressing an emotion, but this emotion wasn't necessarily the composer's _own_ emotion. Then again, the second paragraph is not correct. The "feeling of grief" in a Bach piece isn't a coincidence (well, it may be a coincidence if you try to relate it to the things that happened during the composers life at that moment). A lot of baroque pieces did try to evoke a specific emotion in the listener, so if a piece sounds sad, then that's on purpose. This emotion simply didn't necessarily have anything to do with the composer's own life at that moment.

(that's why they had the examples "what *are* they doing" instead of "what *is* they doing" like it would be with other pronouns like she or he) I'm not sure if any of this makes sense but in short, they were not saying that you can't use "they" to refer to a singular person. they were saying that when you are referring to a singular person with "they" you refer to that singular person as if they were a group of people, saying "are" instead of "is"
